What an EXCITING Superbowl! Seriously- to have the Giants swoop in and take it away from the Pats like that? And in the last 35 seconds of the game! Everyone was jumping up an down and screaming their heads off at our place. I hate it when a Superbowl is a blowout- but this was a really exciting game right down till the very last second. We had a great crew of people at our place, everyone ate and drank too much making this AM a little less than favorable. I think Chuck Norris might have had the best time managing to score several pigs 'n a blanket, at one time literally snagging one directly out of Heidi's hand. By the end of the night the boys had all passed out- too much excitement for one day.



The food favorites seemed to be the Turkey Chili, the Spicy Wings, and the Pigs 'n a Blanket. I made way too many dips- but these items were all gone by the end of the night. Recipes below:


Turkey Chili (Deer Valley Resort Style)
1 can of black beans
1/2 cup unsalted butter
2 medium anaheim chilie's, seeded and chopped
2/3 cup red onion - chopped
2/3 cup red bell pepper - chopped
2/3 cup celery - chopped
1 large leek (white part only) - chopped
2 garlic cloves - minced
2 tbsp oregano
1/4 cup flour
2 1/2 tbsp chili powder
2 1/2 tbsp cumin
2 tbsp coriander
1 tsp salt
1/4 tsp sugar
5 cups of chicken broth
2 1/4 cups frozen corn, thawed
4 cups diced cooked turkey

Garnish
Grated cheddar cheese
chopped red onion
sour cream
cilantro
Saltines

Melt butter in a large pot over medium heat. Add anaheim chilies, chopped onion, celery, bell pepper, leek, garlic and oregano. Cook till veggies soften, or for about 10 minutes. Reduce heat to low. Add flour, chili powder, cumin, coriander, salt and sugar, cooking another 5 minutes. Add 4 cups of stock and bring to a simmer. Puree1 1/4 cups of the corn with remaining cup broth in a food processor. Add puree to chili. Mix in black beans, turkey and remaining cup of corn. Simmer and stir occasionally.


Spicy Wings (10 Wings)
Batter
1/2 cup flour
1/4 tsp paprika
1/4 tsp cayenne
1/4 tsp salt
1/4 tsp onion powder
1/4 tsp garlic powder

Sauce
1/4 cup butter
1/4 cup Franks hot sauce
dash of pepper
dash of garlic powder

10 party chicken wings
vegetable oil for frying
blue cheese dressing and celery for serving

In a bowl, mix the batter together and toss with the wings till coated. Refrigerate in a baking dish for 60-90 minutes (you can't skip this step or the wings won't be as crispy).
Heat oil in a deep pan to avoid spattering to 375. Use enough to cover the wings entirely.
Separately, in a smaller saucepan, combine the butter, hot sauce, pepper and garlic powder till melted and combined. Set aside and reserve for serving.

Fry the wings for 10-15 minutes until crispy. Mix with the sauce and serve with blue cheese dressing and celery.


Pigs 'N' a Blanket
4 Hebrew National hot dogs (you have to use Hebrew National- they are the best!)
2 pkgs of crescent roll dough
jack cheese grated
mustard to serve with

Preheat oven to 350.
Cut the hot dogs into thirds and then lengthwise into quarters so you have 12 inch and a half long strips. They aren't as pretty as traditional pigs - but they taste wonderful!

Unroll the crescent dough and cut each triangle into thirds. Sprinkle with jack cheese and roll up the hot dog.

Place on a greased/sprayed cookie sheet and bake for 10 minutes or till browned.
Serve with mustard or whatever you like.
